Chipotle Breakfast Torta

So, it's the weekend... You're feeling free, hungry, and maybe a little spicy. Well, here's a torta that will fuel your weekend activities, make you feel manly, make your cardiologist mad, and cure that itch you've been having for some good Mexican food. Don't be afraid of chipotle peppers, they just want to be your mild, relaxed friend.

It's great for the weekends. It's brunch without the doilies. It's not health food. It's pretty manly, but not discriminatory. The great thing about it, is with a cup of coffee, you've got all your main food groups: Coffee, Dairy, Eggs, Vegetables, Meat, Breads, Fats.


The recipe follows.


Serves 1 person. Takes about 15 mins to make.

Ingredients:
1 Roll (something bigger and/or more authentic -- a Telera satisfies both)
2 Eggs
1/2 can (3.5oz) chipotle peppers in adobo sauce
2 slices of white onion
4 Slices of bacon
1/4 cup cheddar, mexican blend, or habanero/jalapeno/pepper jack cheese
1/2 cup refried black/pinto beans
salt
pepper
1/2 Avocado (optional)

Calories: 1005


1.) Put the bacon on a foil-lined baking sheet, in a cold oven, set to 400°F. Cook until crispy.

2.) Slice the roll in half, put your shredded cheese in it and toast it in the toaster oven (or in the oven with your bacon -- on a separate surface) until it's toasted to your preference.

3.) Heat a skillet on medium heat on the stove. Take out the bacon and put it on paper towels to drain. Remove some of the bacon fat into the skillet.

4.) Fry your chipotle peppers with sauce in the skillet for 2-3 minutes, until tender and a little browned on the outside.

5.) Remove the chipotle peppers from the skillet.

6.) Fry 2 eggs in the pan, with the grease and leftover sauce. Add a little water (be careful!) and cover it to allow them to fry and steam the top (unless you like the whites runny, then don't cover and fry to your liking). Be sure to salt and pepper your eggs to your liking.

7.) Salt the beans and heat them in the microwave for 1-2 minutes.

8.) Assemble your sandwich. Spread the beans on top of the cheese on one half of the roll. Put on your peppers, onion, eggs, bacon, and avocado.




9.) Beware... it's messy. Not for a work morning, in your suit, just before hitting the office. You might even want to shower afterwords.

10.) Enjoy! And be sure to go for a good hike or do some really strenuous exercise that day, to burn a few calories.
